Sunflower Chives Spread

Since this spread lasts at least 5 days in the fridge, it's a great staple for sandwiches, baguettes, etc.

INGREDIENTS

  • 4 tbsp chopped chives

  • 1 small white onion

  • 120g sunflower seeds

  • 55ml sunflower seed oil

  • 1 tbsp dried mixed herbs

  • ¼ tsp nutmeg

  • Juice of ¼ lemon

  • Salt and pepper to taste

  • Optional: 1 clove of garlic

DIRECTIONS

  • In a food processor or high speed blender, add sunflower seeds, oil, and the spices.

  • Pour in enough water for everything to be covered, and blend until a creamy but slightly chunky paste forms.

  • Chop up the chives and add to the mix with a finely chopped onion.

  • Let set for about 20 minutes before serving.
