Crepes with cooked apples

I sometimes have this for breakfast - and other times as something sweet to finish off a meal. There are no rules for rebel vegans!

Serves 2-4

INGREDIENTS:

  • 200g spelt flour 

  • 300 ml plant milk

  • 2 tbsp cane or coconut blossom sugar

  • Pinch of salt

  • 2 small apples

  • 1 tsp coconut oil

  • Few raisins

  • 1 tbsp cane or coconut blossom sugar

  • Pinch of each nutmeg and cinnamon 

METHOD:

  • Prepare the crepes batter by simply adding all the dry ingredients into a mixing bowl before pouring in the milk.

  • Whisk together and cook in a lightly greased pan over low-medium heat on both sides. 

  • Chop up the apples and transfer them into a small pot together with the raisins, cinnamon, nutmeg, coconut oil, and sugar. 

  • Cook down over low-medium heat and keep covered until you have finished the crepes batter.
